What is inside your Gluten-Free dough?

Our Gluten-Free puff pastry dough for our tarts and quiches includes a blend of Potato Starch, Rice Flour, Almond Flour, and Butter (yes, these are French...) with a hint of Xanthan Gum that binds the dough the same way regular wheat flour does. 

Our Crème Brûlée contains, Heavy Cream, and Eggs. The Vanilla has Vanilla Bean, and the Lemon has Lemon Juice. We use sugar free chocolate for our Chocolate Crème Brûlée. We use real Pistachios in our Pistachio Crème Brûlée.

Really??? No sugar??

Correct. We use an imported all natural French sugar substitute which is blended Yacon syrup and Monk fruit, eliminating the bitter aftertaste of other sugar substitutes. There is no processed sugar in any of our tarts/pastries. Only sugar that occurs naturally in our sliced fruits.

How do you ship?

Each pastry is individually vacuum pack sealed inside an insulated box with ice and foam to ensure quality and un-compromised product.

We cannot ship to PO boxes.

When do you ship?

Our pastries are baked and shipped fresh Monday through Wednesday.
Orders received after 12 p.m. Tuesday will ship the following Monday, or the first business day unless otherwise arranged through us.
Overnight orders must be placed by Thursday 3 pm to qualify for same-week shipping.
Otherwise, the order will ship the following Monday or the first business day.
We recommend selecting the quickest method of shipping depending on your region in order to guarantee the safe delivery of your pastries.
We are not responsible for shipping delays.
Example: If you live in Texas we recommend 3day Select over Ground.

What do I do when I receive my pastries?

Refrigerate or freeze until ready to serve! Our tarts and quiches are already baked. While they can be eaten cold for the most flavorful results we recommend that you reheat the tarts in a pre-heated oven at 375 degrees for just 10-15 min.

The Crème Brûlée can just be defrosted and is meant to be eaten cold.

Simply because we have procured the finest quality all natural ingredients in the world to meet and exceed Chef Thomas's high standards of excellence. While our pastries are Gluten-Free and Sugar Free, they don't taste like they are.
